蹄膀用的是有生產履歷的臺灣品牌「究好豬」前腳部位，油脂不多不少，滷起來不膩。

整隻蹄膀慢火滷 4 個鐘頭，皮色紅亮，青蔥的清香和豬肉本身的甜味都滷進醬汁裡。皮有彈性，肉軟但不爛，是長輩會點頭的那種口味。

元蹄外形圓潤，在傳統習俗裡有一團和氣、圓滿的意思，所以過年送禮、家中祭祖、請客上桌都常用。
